Lemon & Black Garlic Chicken
1 x Red onion
4 x Cloves of Black Garlic, Diced
750g Chicken thigh, Diced
1 x Lemon
2 x Handfuls of Baby Spinach
125 g or 1 x Pack of mushrooms, sliced
Salt & Pepper
- Prepare all ingredients by dicing the chicken, garlic, onion, grating the zest of one lemon and slicing the mushrooms
- Place the olive oil and diced chicken in a pan and cook until golden.
- Add the diced Red onion, Black Garlic and simmer for one minute
- Add the sliced mushrooms and the zest and juice of one lemon.
- Once chicken and mushrooms are entirely cooked, stir through the Baby Spinach and season with S&P
Brown or White rice.
